Creamy tomatillo avocado dip blended with Greek yogurt, spinach, and cilantro. Perfect as a Tex-Mex party dip, salad topper, or nacho garnish.
INGREDIENTS:
1 cup Enchilada Queen Tomatillo Sauce
1 small avocado
3 tablespoons plain Greek yogurt or sour cream
¼ cup minced spinach
¼ teaspoon salt
2 tablespoons avocado oil or olive oil
PREPARATION:
- Combine all ingredients in a food processor or small bowl. Blend until smooth. Best if served chilled.
- Yields about 1 cup. Recipe can be doubled, if desired.
Serve on a salad or as a party dip by deleting the olive oil to thicken the sauce a bit.
