Pollo Guisado (Stewed Chicken)

Pollo Guisado is a simple Tex-Mex stewed chicken made with rotisserie chicken, salsa, and spices. Perfect for enchiladas, tacos, or flautas and ready in minutes.

INGREDIENTS:

  • 1 lb. mixed rotisserie chicken meat
  • ¾ cup Enchilada Queen Salsa
  • ½ cup water
  • ½ teaspoon salt or 1.2 teaspoon chicken Bouillon
  • ½ teaspoon ground cumin (optional)

PREPARATION:

  1. Combine all ingredients in a 10-inch skillet and bring to a simmer over medium heat.
  2. Cover and simmer for 5 minutes.
  3. Turn off heat and allow to rest for 5 minutes.

Serve this flavorful recipe in enchiladas, tacos, chalupas, or flautas. The best part? Leftover chicken freezes well and stays fresh and delicious for up to 3 months.
