Pollo Guisado is a simple Tex-Mex stewed chicken made with rotisserie chicken, salsa, and spices. Perfect for enchiladas, tacos, or flautas and ready in minutes.
INGREDIENTS:
- 1 lb. mixed rotisserie chicken meat
- ¾ cup Enchilada Queen Salsa
- ½ cup water
- ½ teaspoon salt or 1.2 teaspoon chicken Bouillon
- ½ teaspoon ground cumin (optional)
PREPARATION:
- Combine all ingredients in a 10-inch skillet and bring to a simmer over medium heat.
- Cover and simmer for 5 minutes.
- Turn off heat and allow to rest for 5 minutes.
